Jiminy Christmas is a soft expletive. Instead of saying, "Jesus Christ!" the person may say, "Jiminy Christmas!" (or "Jiminy Cricket!").

This is analagous to someone saying, "Gosh darn it!" or "God Bless It!" instead of "God damn it!" during a moment of frustration or duress.
